While producing the artisan Manchego cheese and the extra virgin olive oil, we fully respect the environment.
The relationship between production and environment is vital within our philosophy. We always take care of the treatment of waste like the whey powder during the production of the cheese or the vegetable waters generated during the production of the extra virgin olive oil:
– Whey powder: we do not dump our waste into the public sewer system. We store it for the pork feed.
– Vegetable water: we do not dump our waste into the public sewer system. Together with the marc and the water used to clean the olives, it is used to irrigate the fields.
